Easy Chicken Cordon Bleu With Zucchini (Single Serving)


I was looking at what I had in my fridge the other day and was wondering how I could make the scant few ingredients into something tasty that would require very little work. 
I used some traditional cordon bleu ingredients and threw in some not-so-traditional ingredients and came up with this fairly healthy, very filling, high protein dinner that you can have ready in under 40 minutes.


Easy Chicken Cordon Bleu With Zucchini

Ingredients
1 chicken breast (~6 oz), boneless/skinless
salt & pepper
1 large slice of Swiss cheese
4 slices deli ham, thinly sliced
1/4 cup Parmesan cheese, shredded
1 small zucchini, peeled and sliced thin (about 1/2 to 1 cup of slices)

Directions
Preheat oven to 350.  Spray an 8 X 8 inch pan with cooking spray, set aside.
Place breast in a ziplock bag, using a meat mallet, pound chicken until thin. Chicken should almost cover the bottom of the 8 X 8 pan. Season with salt & pepper.


Place slice of Swiss cheese on top of chicken. 


Top with the sliced deli ham.


Layer zucchini slices over ham and sprinkle with the Parmesan cheese.


Bake at 350 until chicken is done and zucchini is tender, about 20 - 30 minutes. Serve hot.

This dish feels lets you feel like you are eating an entire 8 X 8 pan of food....because you are.....
I love how moist the chicken is when it is cooked this way. Being so thin the meat cooks faster and the liquid from the zucchini and the cheese help keep it moist. 
Maybe not the prettiest dish but, for how little work you have to put into it, certainly a very tasty one!
